Crispy Cheesy Roll Ups (Print Version)

Golden bread rolls stuffed with mozzarella, coated in seasoned panko, and pan-fried until crispy. Ready in 25 minutes.

# What You Need:

→ Bread

01 - 8 slices white or whole wheat sandwich bread, crusts removed

→ Cheese Filling

02 - 8 sticks mozzarella cheese or cheddar (about 1 oz each)

→ Egg Wash

03 - 2 large eggs
04 - 2 tablespoons milk

→ Breadcrumb Coating

05 - 1 cup panko breadcrumbs
06 - 1/2 cup grated Parmesan cheese
07 - 1 teaspoon garlic powder
08 - 1/2 teaspoon dried oregano
09 - 1/4 teaspoon black pepper
10 - 1/4 teaspoon salt

→ For Frying

11 - 1/3 cup vegetable oil

# How to Make It:

01 - Using a rolling pin, gently flatten each slice of bread until thin and pliable.
02 - Place a cheese stick at one end of each flattened bread slice. Roll up tightly, pressing gently to seal.
03 - In a shallow bowl, whisk together the eggs and milk until well combined.
04 - In another shallow bowl, combine panko, Parmesan, garlic powder, oregano, pepper, and salt. Mix thoroughly.
05 - Dip each roll up first in the egg mixture, allowing excess to drip off, then coat thoroughly with the breadcrumb mixture, pressing gently to adhere.
06 - Heat vegetable oil in a large skillet over medium heat until shimmering.
07 - Fry the roll ups in batches, turning frequently until all sides are golden brown and crispy, about 2–3 minutes per batch.
08 - Transfer cooked roll ups to paper towels to drain excess oil. Serve immediately while hot and crispy.

# Expert Hints:

01 -
  • They come together in under 30 minutes but taste like you spent way more effort on them
  • The panko Parmesan coating creates this shatteringly crispy exterior that somehow keeps the cheese perfectly melty
  • You can prep everything ahead and fry them right before guests arrive
02 -
  • Don't skip pressing the breadcrumbs onto the roll ups or they'll fall off in the oil
  • If the cheese starts leaking out before the coating is golden, your oil is too hot, lower the temperature slightly
  • These are best eaten within 30 minutes while the coating is still crispy
03 -
  • Use day old bread which flattens more easily without tearing
  • Let the coated roll ups rest for 10 minutes before frying so the coating sets
