16 - 1 tbsp soy sauce
17 - 2 spring onions, sliced

# How to Make It:

01 - Toss prawns with olive oil, minced garlic, lemon juice, salt, and pepper. Let marinate for 10 minutes at room temperature.
02 - Heat large skillet over medium-high heat. Add prawns and cook 1 to 2 minutes per side until pink and opaque throughout. Remove and set aside, keeping warm.
03 - Heat vegetable oil in wok or skillet over medium heat. Add onion, bell pepper, and carrot. Stir-fry 3 to 4 minutes until just tender.
04 - Stir in peas and cook 1 minute. Push vegetables to side of wok, pour in beaten eggs, and scramble until just set. Combine with vegetables.
05 - Add cooked rice, breaking up clumps. Stir in sweet chilli sauce, soy sauce, and sesame oil. Toss until well combined and heated through, about 2 minutes.
06 - Stir in sliced spring onions. Divide fried rice between plates and top with garlic prawns. Garnish with additional parsley if desired.

# Expert Hints:

01 -
  • The combination of tender garlicky prawns with sweet and spicy rice hits every craving in one bowl
  • It transforms humble leftover rice into something that feels special enough for guests
  • The entire meal comes together in under 40 minutes with minimal cleanup
02 -
  • Cold, day-old rice is non-negotiable for proper fried rice texture
  • Do not crowd the pan when searing prawns or they will steam instead of get that nice golden exterior
  • Have all ingredients prepped before you start cooking because everything moves fast once heat is involved
03 -
  • Pat the prawns completely dry before marinating so they sear rather than steam
  • Let your wok or skillet get properly hot before adding any oil for the best fried rice texture
