01 - Preheat your waffle iron according to the manufacturer's instructions.
02 - In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well blended.
03 - In a separate bowl, whisk the ricotta, eggs, milk, melted butter, lemon zest, lemon juice, and vanilla extract until smooth and creamy.
04 - Pour the wet ingredients into the dry ingredients. Gently fold together until just combined, being careful not to overmix. Small lumps are acceptable and will disappear during cooking.
05 - Lightly grease the preheated waffle iron with nonstick cooking spray or melted butter.
06 - Pour the recommended amount of batter onto the waffle iron. Close the lid and cook until golden brown and crisp, approximately 3–5 minutes depending on your iron.
07 - Remove cooked waffles and place on a wire rack or baking sheet in a warm oven. Repeat with remaining batter until all waffles are cooked.
08 - Serve waffles immediately with warm maple syrup. Garnish with fresh berries and a dusting of powdered sugar if desired.
