# What You Need:

→ Dry Ingredients

01 - 1½ cups all-purpose flour
02 - 2 tablespoons granulated sugar
03 - 2 teaspoons baking powder
04 - ½ teaspoon baking soda
05 - ¼ teaspoon salt

→ Wet Ingredients

06 - 1 cup whole milk ricotta cheese
07 - 2 large eggs
08 - 1 cup whole milk
09 - ¼ cup unsalted butter, melted and slightly cooled
10 - Zest of 1 large lemon
11 - 2 tablespoons freshly squeezed lemon juice
12 - 1 teaspoon vanilla extract

→ To Serve

13 - Warm maple syrup
14 - Fresh berries (optional)
15 - Powdered sugar for dusting (optional)

# How to Make It:

01 - Preheat your waffle iron according to the manufacturer's instructions.
02 - In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well blended.
03 - In a separate bowl, whisk the ricotta, eggs, milk, melted butter, lemon zest, lemon juice, and vanilla extract until smooth and creamy.
04 - Pour the wet ingredients into the dry ingredients. Gently fold together until just combined, being careful not to overmix. Small lumps are acceptable and will disappear during cooking.
05 - Lightly grease the preheated waffle iron with nonstick cooking spray or melted butter.
06 - Pour the recommended amount of batter onto the waffle iron. Close the lid and cook until golden brown and crisp, approximately 3–5 minutes depending on your iron.
07 - Remove cooked waffles and place on a wire rack or baking sheet in a warm oven. Repeat with remaining batter until all waffles are cooked.
08 - Serve waffles immediately with warm maple syrup. Garnish with fresh berries and a dusting of powdered sugar if desired.

# Expert Hints:

01 -
  • The ricotta creates the most incredibly tender crumb while keeping the edges perfectly crisp
  • Fresh lemon transforms ordinary breakfast into something that feels like a special occasion
02 -
  • Overmixing will make these waffles tough instead of tender—stop folding as soon as the flour disappears
  • Whole milk ricotta makes a noticeable difference in richness that low-fat simply cannot achieve
03 -
  • Room temperature ingredients blend more easily and create a more uniform batter
  • Leftover waffles freeze beautifully and reheat in the toaster for quick weekday breakfasts
